In the orchards of Santa Tecla, the Salvadoran coffee institute spent the better part of a quarter century persuading two improbable parents to breed true. The compact Pacas — itself a dwarf sport of Bourbon, discovered on the Pacas family farm a decade earlier — brought sturdiness and a tight, pickable canopy. The Maragogipe brought the opposite: a sprawling habit and a seed so large it had been a botanical curiosity since the nineteenth century.

What the breeders wanted was the bean without the burden — Maragogipe’s spectacular size on a plant that a farm could actually harvest. Early generations refused to cooperate. Segregation scattered the offspring across every combination of the parents’ traits, and it took repeated selection to fix a line that held the giant seed while inheriting Pacas’s manageable stature.

By the late 1950s the institute had that line, and in 1958 it was released under a name that simply fused the two parents. For decades Pacamara was a regional specialty, respected at home and little known abroad. Its reputation abroad arrived later and mostly through the competition table, where cups from El Salvador and, increasingly, Guatemala and Nicaragua began placing on the strength of a flavor that was hard to mistake for anything else: a bright, almost herbal top note over a dense, syrupy body.3

That distinctiveness cuts both ways. Pacamara is a polarizing cup — the same savory, green-herbal register that devotees prize can read as vegetal or unresolved to others — and the variety is famously sensitive to how it is grown and processed, rewarding high altitude and punishing shortcuts.

Today it occupies a particular niche: a variety grown deliberately, by producers willing to accept its modest yield and temperamental agronomy in exchange for a cup that stands apart on a menu. The observed record above is the current evidence of that — who is roasting it now, from where, and how.
